All our pork is free range and additive free, the pigs spend most of
their time outdoors but we do farrow indoors sometimes. We use
traditional breeds of pig (Gloucester Old Spot, Saddleback, Large White,
Berkshire) and cross them with an Oxford Sandy and
Black or Gloucester Old Spot cross Large White boar. The Traditional
breed gives the pork a more traditional flavour. We make all our own
sausages and cure all of our own bacon.
The bacon and ham is traditionally dry cured and has a wonderful flavour. We
sell cooked ham as well. We also have our own smokery and can smoke anything you like not
only pork we smoke cheese, chicken, salmon and salt beef.
Our lamb is all free range and additive free, with the ewes coming
indoors for about 5 weeks a year to lamb. They are mainly Kent and Suffolk. The rams are Texel cross Dorset Down
so the end product is mainly a hardy lamb that takes slightly longer to
finish than some of the more modern breeds but are very well suited to
the Pevensey marshes and are of better flavour. All cuts are available
and we also do a very tasty lamb and mint sausage.
All the beef is additive free and where possible it is of Sussex or
Sussex cross and Aberdeen Angus cross. The Sussex bullock is well
adapted to the Pevensey marshes and produces a lovely flavoured beef
with a creamy fat. We hang our beef for a minimum of three weeks in the
cold room before cutting it, four where possible. This helps the beef to
mature and brings out the flavour as well as tenderising it, the flavour
speaks for itself. All cuts of beef are available and we also make a
tasty beef and mustard sausage. Homemade beef burgers are also
available; they contain 100% minced beef with onion and seasoning, no
additives and no preservatives.
Our chickens come from a farm 4 miles away and are additive free as
well. They are of excellent quality and full of flavour. Again the
flavour speaks for itself.
We raise our own Turkeys for Christmas and have used the Bronze for the
last 4 years.
The chicks come in as day olds at the end of July and then we rear them
to finish weight. These are again additive free and full of flavour.
Again they are hung for fourteen days to improve flavour and tenderness.
We source as much of our vegetables locally as is possible. We have a
grower 3 miles from us and his vegetables are of a very high standard.
Vegetables are seasonal and we do our best to beat the supermarket
prices and quality. We generally have a good selection to complement the
meat that we produce and sell. We also sell a range of fruit and we buy
this locally when it is available.
We also bake our own cakes in the shop and Angie makes a very tasty
banoffi pie.
We have a large range of Jams and Marmalades, some homemade and some are
from the taste of Sussex range. Mustards and sauces are also sold. We
also have our own homemade meat pies, sausage rolls and pasties. We also
offer Cream teas with clotted cream and strawberry jam with homemade
scones.
Our cheeses are made locally and we have a fairly large range on offer.
We sell fresh milk and a very tasty Organic drinking yoghurt from a
neighbouring farm. Clotted cream, butter and yogurt are also available
along with some sheep and goats cheeses and milk etc. |
